The statement stands absolutely true when you decide to venture the magical world of food in Pakistan. Yes, once a part of India and now a neighbor with whom we share bitter-sweet relationship is famous for some of its amazingly mouthwatering dishes.
Though there are lots of similarities to the cuisine of North India but the food of Pakistan looks much influence from Central and Western Asia. Also, there are distinctive sub-divisions of cuisines that differ from one region to another.
Today we present seven recipes that can easily be considered as being a symbol of Pakistani cuisine.
Boil mutton in a pan and keep only the main bone parts. In a pan, heat up ghee along with garam masala. Stir and mix after adding ginger-garlic paste, cumin powder, yellow chilli powder, turmeric powder, and coriander powder. Sauté the boiled mutton into the mixture then add some of the broth. Cook till the meat is tender then add whisked paste of curd and gram flour. Use salt to garnish before serving.
Add salt, lemon juice, garlic paste, red chili powder, cumin powder, ginger paste, garam masala, yellow food dye, and coriander powder in a bowl. Turn in a paste and marinade the chicken for about 8 hours. Then again marinade using garlic and salt for 1 hour. Wash off the residue and dry the chicken. Barbeque on the charcoal fire, garnish with chopped coriander and lemon. Serve and enjoy.
Boil water with cardamom. Then add salt, star anise, soda bicarbonate and tea leaves. Keep stirring till it boils, the put milk. Let it simmer then strain the tea. Again boil the tea with sugar then add chopped pistachios. Pour in a glass and serve hot.
Sauté onion till it turns light brown. Then add chopped tomatoes and fry a little. Now is the time to add black pepper, cloves, coriander, turmeric, chilli and garam masala powder. Add garlic and ginger paste along with salt. Then add the minced meat and sauté for some time before adding 2 cups of water. Cook till the water dries and the meat turns tender. Then add peas and cook till they are soft.
Finally sprinkle coriander, chopped green chillies, and lemon juice before serving.
Crush coriander and mix it with gram flour, red pepper, turmeric powder, pomegranate seeds, spice powder, salt and minced meat. Add chopped onion, chillies, and tomatoes in the mixture. Finally, make a semi-solid batter using egg and butter. Make the patty and fry until golden, serve with ketchup.
Put Maida, sugar, salt, egg, gee, poppy seeds, sooji, yeast and cardamom powder together. Slowly add milk to make dough. Keep aside for one hour after covering. Then make ball and roll in semicircle then put some ghee on top. Put two more layers and then slit using a fork. Grill for 12 minutes and serve with some ghee.
Heat sugar in water, make syrup and keep aside. Soak almond and aniseed for about 2 hours. Drain the water and make a fine paste. Add some water then blend again and strain. The put sugar syrup, milk, and rose water in the paste along with cardamom powder. Mix a pinch of pepper and chill the mixture for 2 hours.
Serve chill and enjoy.
