If you calculate, they capture more than 3.4 billion searches per day.

Click on the three dots that you see on the top-right and then click on the Activity controls.

Scroll down to Voice & Audio activity & click on Manage Activity.
Here you'll find the complete list of the times Google has recorded your voice. With or without you coming to know. It's quite weird guys, so brace yourself.
But, you can delete every voice notes manually by clicking on the three dots on the top right corner of every card. That's it, no need to worry anymore!
